Last week I made a personal .

This little beauty is my super moist, 3-layer with my signature chocolate cream cheese frosting.

Measuring 4 inches (10cm) wide and around 5 inches (12.5cm) high this cake is perfect for any celebration.

This week in the at Kelley Produce:

I have made a delightful lemon ricotta cake. Zesty from the lemons, moist from the ricotta, delicious from the first taste.

The Texas Peaches are still sweet, still juicy and delicious and, because it was so popular, I have made another brown butter peach cake. Laden with diced peaches, nutty from the brown butter, and topped with a delightful brown sugar crumble.

Finally I have made an Almond All-Butter Shortbread. A new flavour. Not too sweet, and perfect with a glass of iced tea, because it is a little warm out there.

Have you ever picked a slice or two of my cake from Kelley Produce and thought "I wonder if I could get a whole one? πŸ€”"

Well, the good news is, you can.

You can message me and I will bake to order a WHOLE cake that you can take home to share, or not, I won't judge.

Today, someone wanted a whole , and I baked one using the texas from Kelley Produce. If you recall from my last post, this is a brown butter sponge, laden with diced peaches and topped with a brown sugar crumble. It is simply delicious.

I also bake many other cakes, cookies, breads, etc., available for pick up or delivery.

The Texas Peaches are sweet, juicy and delicious, so I have made brown butter peach cake. This cake is made with browned butter and brown sugar, creating a nutty caramel flavour. It is laden with diced peaches and topped with a brown sugar crumble.

For my citrus stans, there is a lemon drizzle cake. This lemon cake is delightfully light and drenched in a lemon syrup. The lemony, sugary crust tastes like a glass of lemonade. Perfect for this warm weekend.

There is also some Pecan All-Butter Shortbread. Nutty, not too sweet, and perfectly sized for snacking.

I managed to snaffle a basket of Texas Peaches, so I decided to make some Brown Butter Peach Crumble Bars; a buttery biscuit base made with browned butter for a delightful nutty taste, layered with delicious peaches, a pinch of cinnamon, and topped with a brown butter crumble. The browned butter compliments the peaches perfectly.

My second treat is a lemon curd blueberry cake. This cake is made with English lemon curd, yogurt, lemons & blueberries. It is wonderfully moist and has that zing that makes your ears tingle and your mouth water.

I have made a new variation on my All-Butter Shortbread. This week it is Orange Chocolate Chip. Orange zest adds a little bit of brightness to an already delicious shortbread cookie.

This week I decided to do something a little different with the plums. I made some Brown Butter Plum Crumble Bars; a buttery biscuit base made with browned butter for a delightful nutty taste, layered with jewel-like with a hint of cinnamon, and topped with a brown butter crumb. Crisp, jammy and nutty, if I had to pick three adjectives.

Next up is my simply lovely Mixed Berry Buttermilk Cake, made with raspberries, blackberries and blueberries. Light and fluffy and packed with sweet and tart berries, with a sugary crust that makes your mouth water.

As the sun is shining, I thought I would make some Lemon All-Butter Shortbread. Are there photos of them? Surprisingly, yes! πŸ˜‚πŸ˜‚

Plums are back. Sweet, juicy with a hint of tartness, and so the Plum Crumble Cake is this week's featured bake. A deliciously moist cake, with a plum layer, topped with a ground almond, butter streusel. In the UK we would serve this with a cup of tea, but I know we are in the land of coffee. There shall be no judgement on my part. πŸ˜‰

As the seasons change, I have to let my Grapefruit Drizzle Stans know that this weekend is the last weekend, (for a while), that grapefruit drizzle will feature in the store. It will be back once the TX ruby grapefruit is back in season, so watch this space.

The Chocolate Chip, All-Butter Shortbread are still in the lid. Are there photos of them? Nope. πŸ˜‚πŸ˜‚

The strawberries in Kelley Produce are particularly delicious, so I made a Strawberry Cake to showcase them. The sponge is almost like a sour cream pound cake, flavoured with lemon (juice and zest), layered with chopped strawberries and topped with halved strawberries. A joy to behold and a joy to eat.

TX Ruby Grapefruit is still available in the store, it is still delicious, and I would be remiss if I didn't make my tastebud-tingling grapefruit drizzle cake (I also think I would be run out of town if I didn't make it).

There are also some Chocolate Chip All-Butter Shortbread in the box and I managed to take a photo of the elusive little so-and-sos.

After a small hiatus, the is back at .

Kelley Produce makes some absolutely delicious strawberry jam. Seriously. When you open the jar, your senses are filled the aromas of spring. As I have been back in Blighty, I was inspired to make a Victoria Sandwich (Victoria Sponge Cake). This is a British classic, named after Queen Victoria, who was partial to a slice or three with her afternoon tea. It's a wonderfully simple sponge cake layered with strawberry jam. With it being this weekend, I am sure Mums, Moms, Nannas and MeeMaws everywhere would enjoy a slice too.

Of course my Grapefruit Heads wouldn't allow the weekend go by without my life changing grapefruit drizzle cake in the box. The Texas ruby grapefruit is still eating good.

There are also some Chocolate Chip All-Butter Shortbread in the box. I forgot to photograph them, so normal service has resumed πŸ˜‚

This weekend I had the absolute pleasure of baking for the annual β€œBoots & Brews Tea Party” benefitting - a wonderful charity supporting unhoused teens attending school in Irving, TX.

There was a traditional Tea Service (by Mr Bird) served with my ever elusive shortbread.

On my afternoon tea table were: Cucumber Sandwiches, Egg & Cress Sandwiches (both with my homemade sandwich bread), Victoria Sandwich with strawberry jam, Coffee & Walnut Cake and my life-changing Grapefruit Drizzle Cake. Obviously there were also Rich Scones with Raspberry Jam & Devonshire Clotted Cream served Devon-style .

The weather held out (thankfully), and people had a great time whilst raising money for such a worthy and important cause. You really ought to check out the organisation (https://www.levelpathways.org/) and see if there are ways you too can contribute.
