Freezing and subsequent thawing of bread completely alters its glycemic index by fundamentally transforming its starch through a process called retrogradation.

When bread is baked, its starches gelatinize, making them highly accessible and rapidly digestible by enzymes in your small intestine, which causes a sharp spike in blood glucose. However, when you subject that same bread to freezing temperatures, the amylose and amylopectin molecules recrystallize into a highly ordered structure known as resistant starch.

This newly formed resistant starch physically resists enzymatic breakdown, acting more like dietary fiber that passes into the large intestine largely intact. Clinical research has demonstrated that this biochemical shift results in a significantly blunted glycemic response, generating roughly 39% less of a blood sugar spike compared to eating the exact same bread fresh.

We'll have thumbprints in small and bulk packages including a medley option so you can try all 4 flavors.

Remember that quantities are very limited due to my recovery from knee surgery.

Post surgery update:

While I am recovering from knee surgery, menu options and quantities will be LIMITED.

I am non-weight bearing via crutches for 2 weeks so that zaps my energy real fast. 🥺 Then slowly work back up to full weight bearing and rebuilding strength.

⚠️Unless they are pre-ordered, Gluten Free products are taking a back seat til I'm back to full speed.⚠️

Regular and Einkorn product quantities will be limited. Pre-order to ensure you get your favorites.

How To Pre-Order:

1) Go to the All Things Sourdough booth at either market- Morgan County/Decatur Farmers Market or Madison City Farmers Market on a Saturday.

Let Brett (my cornerstone♥️aka my husband) or Kristi (my cheerleader 📣 aka my amazing friend) know you want to pre-order.

2) Fill out the pre-order form and make payment for the pre-order.

3) You'll be contacted by me [(Rachel) the owner and baker] Monday or Tuesday with confirmation of the pre-order.

4) Pickup the next Saturday by 10:30am at the market the pre-order was submitted at.

5) Enjoy your delicious sourdough! 😋
