EstoEtno Fine Bakery
EstoEtno Fine Bakery is a micro bakery in Decatur, Georgia. After all, no real Estonian can live without her rye bread!
We offer Estonian-style 100% rye sourdoughs and other delicious traditional baked goods (low sugar) online and greater Atlanta farmer's markets It all started with my quest to find fermented (sourdough) rye bread when I moved from Tallinn, Estonia, to Atlanta, Georgia. Upon arriving in Atlanta, I searched for rye bread just like the kind I ate at home. I sampled the various offerings in grocery stores and farmers markets across the South. Yet I always found that none tasted like the real thing. I soon realized that almost all of the rye bread in America is actually made from wheat--with a little rye flour added. For a while, I settled (quite happily) for organic multi-grain bread from our local farmers market. But it did not fill the void of rye bread in my life. I found that anytime I visited my homeland of Estonia, I returned with my suitcase filled with loaves of fresh rye bread from both grocery stores and the local artisan bread shops. Finally, because I was already an avid baker (of mostly cakes and pies to fulfill my cravings for mildly sweet baked desserts), I decided to try making it myself! It took me a while--and a lot of trial and error--to master the process and create the recipe I truly liked. I even returned to Tallinn just to visit Estonian bakeries (okay, not really just for that!) and learn the best-kept secrets of artisan bread bakers. Today, I am excited to share with you my very own authentic Estonian hand made dark fermented 100% rye bread along with other fine baked goods at EstoEtno Fine Bakery. Tiina D'Souza, Owner/Baker

This year has been a bit challenging. Injuries have happened, recovery has been slow, and now, out of the blue, an old injury has flared up. Ok, maybe not out of the blue, and getting a bit careless with moving hundreds of pounds of flour has something to do with itđ¤.
Weâre on forced break from Alpharetta and Grant Park markets this weekend, sorry. There is no Piedmont Park market this Saturday. Hopefully rest will help and weâll be back next weekend.
Nobody needed rained out market, but here we are. Someoneâs tent collapsed at Piedmont Park and for safety reasons, everyone packed up and went home. Better safe than sorry.
Sooo, we have multigrain, mellow einkorn, and 100% rye sourdoughs and lots of other goodies available for local pickup. There is a selection of whole sheets of tarts: apple cake, nectarine/blueberry tart, plum tart, sour cream tart with red currant for $24-$28 a sheet; some cardamom buns buy 2 get 1 free (3 for $10), and a gluten and dairy free 9â almond orange cake, some rhubarb Tosca cake with coconut.
Most likely will have rye breads available to ship on Monday as well.
Please DM or email to [email protected] if youâre interested. Any purchase helps to cover the costs that have already occurred đ.

Surprisingly, rhubarb is still available. Of course, weâre making goodies with it. The bun is a sourdough cheese bun with mushroom and onions. Super nice sliced and toastedđ.

Youâll have to make your own herring & cottage cheese salad and boiled potatoes, but rye bread you can get from usđ. We also have our hazelnut chocolate tarts today; not too many as it is still a bit too hot for chocolate ganache.
At Piedmont Park Green Market and Alpharetta Farmers Market today and at Grant Park Community Farmers Markets tomorrow.
Herring salad:
herring, cleaned from bones and chopped small (I buy a whole salted herring (guts cleaned out) from Buford Hwy Farmers Market), yellow onion chopped as big or fine as you like, a few boiled eggs chopped, cottage cheese, sour cream or kefir to adjust the thickness and flavor, cucumber for a bit of freshness. Season with black pepper and dill, parsley and chives if you like.herring is salty, so no additional salt is needed. Serve with boiled potatoes, a slice of the bread, and enjoy!
