Powdered eggs have a shelf life of up to 25 years. The ones with that kind of shelf life contain preservatives you won’t find in a real egg. A real egg lasts three to five weeks. The liquid versions contain modified food starch, xanthan gum, citric acid, and artificial colouring to make them look more yellow under the heat lamps. They arrive pre-cooked or in gallon cartons, get heated in industrial steamers, and sit on a buffet for hours. That’s why they’re rubbery, dense, and uniformly yellow — nothing like a real egg.
