“Let Them Cook!” from our Summer issue explores the role PAIRED, the signature dining experience at the Great American Beer Festival Great American Beer Festival, has played in bringing America’s top chefs together with legendary craft breweries. The assignment: create dishes influenced by pours, with each made better by the other. 🧑🏽‍🍳🍻

Not even the threat of a hail storm could stop us! ☔️Last night, we celebrated the release of our Summer issue at the beautiful Poka Lola Social Club at the Dairy Block | LoDo Denver 🍹🍸 In our world where so much of our work happens over emails, Zoom interviews, and shared documents, finally meeting many of the magazine’s incredible contributors, partners and story subjects in person was a reminder that we really do live for offline moments (surprise, surprise)!

🏝️ Poka Lola treated the group to a Pacific Island-inspired menu of crab kinilaw, Filipino-style wings, tamarind chicken sandwiches, crudite and macarons for dessert – because it’s not an Edible event without the food😋 Guests headed home with a very European-style parting gift of artisan bread by Dry Storage Dry Storage Mill, and chefs’ butters by Fireworks Butters (a treat to wake up to this morning!) 🥖🧈If there’s one thing we can promise about being part of the Edible community, it’s that this crowd knows good food🧑🏽‍🍳

“As weather brings warm temperatures and longer days spent outside, many find themselves drawn to their gardens, where the season of abundance and harvest is just beginning. For Mark DeRespinis of Boulder’s Esoterra Culinary Garden Esoterraculinarygarden, he has been here all year long.

The farm is nestled onto a 100-acre property owned by Boulder’s office of Open Space and Mountain Parks. It was founded by Mark, whose farming career began in New Mexico in 2014, and then transitioned to Colorado, where he’s developed a healthy following of restaurant industry professionals. Esoterra Culinary Garden has bloomed (pun intended) into a premier farm-to-chef-to-table operation growing over 70 varieties of crops harvested to serve the culinary scene in the Boulder–Denver–mountain area.”
