CBD INFUSED 💚 PALEO MINT CHIP ICE CREAM.
This recipe makes 8 servings.
Each serving contains 10 mg of full spectrum CBD.

💚 Ingredients:

· 2 (14.5oz) cans of full fat, unsweetened coconut milk

· 2 tightly packed cups of fresh mint leaves

· 4 egg yolks

· ¼ cup raw local honey

· ¼ tsp. liquid stevia (We recommend Now Foods Better Stevia Glycerite)

· 2 tsp. vanilla extract

· ¼ tsp. pink rock salt

· 4 ml (4 droppers full) from a 600mg bottle of Peppermint Liquid Ease from The Lighthearted Farmer. This is a total of 80 mg of CBD, which, divided amongst 8 servings will provide 10mg of CBD to each serving.

· ½ cup chopped dark chocolate


💚 Directions:

· Infuse your coconut milk with mint leaves. To do this, bring coconut milk to a boil in a pot with a tightly fitted lid. Add mint leaves and cover. Turn off heat and allow it to steep until the coconut milk has reached room temperature or for several hours. For extra mint flavor, place pot in the fridge and allow it to continue infusing overnight.

· Strain out mint leaves. If you’ve let your coconut milk infuse overnight, be sure to melt it down again to make straining easier.

· Whisk the egg yolks in a large bowl.

· Slowly add infused coconut milk to the egg yolks, stirring constantly.

· Return infused coconut milk with egg yolks back to the pan.

· Add vanilla and salt.

· Cook over low for about 20 min, stirring constantly. The mixture will noticeably thicken.

· Turn off heat and let cool to room temp.

· Stir in raw honey, liquid stevia and Peppermint Liquid Ease.

· Add mixture to ice cream maker and follow the instructions on your machine.

· As the ice cream begins to form, add chopped dark chocolate.

This is your medicine. A few weeks ago, we drove down to Southern Oregon to visit one of our growers. The trip was quite magical really, and being there on the farm inspired us deeply. As we drove through fertile valleys with h**p farm after h**p farm, we saw a vast array of different farming practices - all of which are considered organic farming. Most of the h**p farms look like a mono culture of h**p plants, some have a few companion plants, other farms have rows mulched with large amounts of plastic stretched across the fields. When we arrived at our destination, our grower greeted us with a smile and brought us out to the field. It was truly unlike any other h**p field we had seen. This farm goes above and beyond todays standard of organic. It’s not just “we don’t use toxic chemicals” or “spray this instead of that". It’s about caring for the land in a holistic way, and using nature as our guide. It’s about cultivating a diverse and healthy environment for plants, insects, and microbes to thrive. In fact, this grower doesn’t spray ANYTHING on the plants. Not even natural essential oils. He prefers to let the plants breath rather than smothering the leaves. He is on the leading edge of organic and sustainable farming. Though we value and respect all organic practices, we couldn’t be more grateful for the standard he is setting. All pest control is done by having a diversity of insects, microbes, and plants such as tulsi, buckwheat, arugula, giant mullein plants, borage, mustard, shepard’s purse, yarrow, clover, marshmallow, poppies and more. These plants act as either pest attractants (meaning pests prefer them to h**p and will therefore eat them instead), pest repellants, beneficial insect attractants, or nitrogen fixators. The biodiversity sustains the life required to support a balanced ecosystem with h**p at the center. Our hearts were elated being out there in the field. Being surrounded by such an abundance of vibrant plants is a medicine unto itself. And to us, the farming practices used to grow the plants we extract is the foundation of the medicine - for both the people and the land. We absolutely love to see the h**p growing next to herbs that are in our balms. Through the interconnectivity of their root systems, we believe these plants communicate and connect as they grow out in the field. When they work in synergy together in our balms, we like to think of them coming back together like old friends, already well versed at working together having done so out there in the field 🙂 Amongst the rows of plants, our prayers were whispered and singing bowls were sung. We know the plants can feel this, and it is the intelligence and wellbeing of these plants that are assisting people in regaining their health. Another part of the magic: the connection we have with our grower. We value and appreciate him immensely. The respect and love in our connection is yet another piece of the whole. As we were driving away from our visit he sent us the following text: “When everyone leaves the farm my heart and soul overwhelms me . And I usually cry in happiness. The glory and magnificent plant perfection is powerful, for me. I'm a steward of a tiny spot on the planet. Helping others heal themselves. For me it's humbling and challenging and worth it. Thanks for stop by!” We couldn’t have said it better ourselves! A great reflection of the kind of business we're excited to nurture. As for our farm: our field is resting this year, and instead of growing h**p, we’re growing a variety of herbs. Many of these herbs will be used to make our herbal balms, (we couldn’t be more stoked about this). Herbs not grown on our farm are sourced from another highly respected organic herb farm in Southern Oregon. The few ingredients we source from overseas (cinnamon, frankincense, etc) are purchased through a trusted company and are always organic and/or fair trade.
