Snap Pea

This year we hosted our second ever Yam Yai Industry Night! This special event brings together chefs, farmers, event coordinators, artisans, and beloved Snap Pea staff for a communal dinner of Thai street food.

We're so grateful for our local food and events community who make what we do possible. This was an incredible evening of creating new connections and celebrating old ones, collaborative musings about our shared future, and sipping after-party beers donated by into the wee hours of the morning. You all make the hard work worth it!

What does it take to bring Snap Pea from North Carolina to San Antonio? A team of four, a cross-country road trip, and connecting with a whole new set of local farmers and producers.

Last month, we headed to Texas to build a concept-driven menu for a corporate client. Out-of-state trips like this can present some logistical puzzles—massive shout-out to Elisabeth, our front of house manager, who drove across the country loaded up with some specialty equipment from our NC kitchen.

Once we all arrived, we hit the ground running. Even outside of NC, sourcing local is a priority to us. We spent our days connecting with Texas growers (including everything from beautiful produce from and pasture-raised Wagyu beef from , to incredible butter from and Texas grown olive oil from ). The event was hosted at the , and brought to life with a team of creatives including our floral partner Olive Thyme

We even managed to squeeze in some downtime at the Riverwalk before heading home. We’re already looking forward to the next trip - reach out if you’d like to bring some Snap Pea magic to your city!

Have you ever heard of clapshot?

The traditional Scottish dish of mashed potatoes and turnips is simple, but the unique name reminded us of a meaningful moment to include in our bridge-centric popup: the sound of neighbors clapping for essential workers from their doorsteps and bridges during the pandemic. That shared moment of gratitude became the inspiration for the dish and story.

Our version swaps in kohlrabi from , featuring whipped kohlrabi mounted with butter. It is plated atop the kohlrabi greens sauteed with green garlic, garnished with chive blossom & bronze fennel and served inside a hollowed kohlrabi shell. The surprise comes when you lift the lid, revealing the full dish beneath. (And yes, some adventurous guests even ate the shell raw!)

MENU REVEAL | Bridges tell stories: they connect (and divide), serve as stages for life to unfold, and carry cultural weight far beyond their original purpose. A meal on a bridge felt like the right way to honor how food and these structures bring people together.

Housemade potato chips from sat nestled in whipped egg puree, mimicking the billowing banners activists use to make big statements on overpasses.

Anelli pasta floated in a spring onion consomme, topped with fried scallions and leeks - evoking couples exchanging rings on picturesque bridges.

The classic American ice cream sandwich was reimagined with an “Eaton Mess”-inspired raspberry semifreddo filling, a playful nod to the London Bridge’s move to Arkansas.

The team hauled food up steep paths, balanced tables and chairs on an old railway track, and made sure every detail ran smoothly. Local and seasonal ingredients took center stage, letting our warm North Carolina spring blossom on every plate.

POP-UP ANNOUNCEMENT / Some of our favorite past pop-ups have required guests to take a bit of a journey to get there. This month is no different. To reach the dinner, guests will need to climb a short but very steep dirt path and sign a liability waiver. And to pull this dinner off, we’re keeping it intentionally small — about half our usual number of seats. But trust us, it’ll all be worth it.
