A Volunteer Tip for Saving Your Tomatoes
Don't let soft, bruised, or surplus tomatoes go to wasteāslow-roasting is the ultimate way to rescue and preserve them. One of our long-time volunteers shared their kitchen routine for concentrating the flavor so you can save them for later.
The Steps:
1ļøā£Prep: Dice the tomatoes and spread them in a single layer on a baking sheet.
2ļøā£Season: Lightly drizzle with olive oil and a pinch of salt.
3ļøā£Roast: Bake at 400°F for 20 minutes. Turn the oven down to 350°F for another 20 minutes. Drop the heat to 300°F for the next 20 minutes. Finish at 250°F for the final 20 minutes.
Once they cool, you can stir them into pasta sauces, drop them into scrambled eggs, or freeze them to use all throughout the year.

At Waste to Taste, we often have extra loaves of pre-buttered garlic bread left after all the shoppers have come through. While it is delicious on its own, a surplus is the perfect excuse to get creative! We experimented with transforming them, and the results came out really delicious.
The garlic butter keeps the inside incredibly soft and springy, while toasting ensures the outside gets perfectly crunchy. Since the loaves are already baked, split, and seasoned, they make the ultimate canvas for whatever ingredients fit your household's style. Plus, the fact that the bread is already "sauced" with delicious garlic butter makes this a very budget-friendly meal shortcut!
Here are three ways to transform yours:
Toasted Sandwich (Top Right):
Layer on your favorite cold cuts, cheese, fresh or pickled veggies, or whatever you like on a sandwich. You don't really need extra sauces or mustard since the bread is already buttered, but you can certainly add your favorite sandwich spread or mustard once it is out of the oven! Toast the sandwich open, then fold and enjoy.
Rustic Pizza or Bruschetta (Bottom Right):
Layer with diced tomatoes or your favorite pizza sauce, and top with cheese. Just toast and slice until crisp, hot, bubbly, and brown. Add as many or as few of your favorite pizza toppings, or just keep it simple with classic bruschetta toppings. It couldn't be easier.
Pizza Bianca ā White Pizza (Bottom Left):
Since the bread is already topped with garlic butter, skip the red sauce and pile on your choice of protein, cheese, and veggies.
How to cook: Assemble your favorite combinations and heat in a toaster oven, air fryer, or conventional oven at 350°F for about 6 minutes until crisp, hot, bubbly, and brown.
This is the perfect weeknight-friendly dinner, ready in about 10 minutes, and for an extra fun and interactive experience, everyone can customize their own!
