Throwing it back to the 2018 World Cup, when South Korea beat defending champions Germany helping Mexico move on to the next round! 🙌

Mexican fans were so grateful that they celebrated by visiting the South Korean Embassy, lifting Consul General Han Byoung-jin on their shoulders and chanting: “Coreano, hermano, ya eres Mexicano! (“Korean brother, you are now Mexican!”) 🥲😂

One of the unexpected joys of starting Kottage was getting to run each order to you guys! I loved meeting so many of you, learning your names, seeing your anticipation in trying our food, and watching familiar faces become part of our little community.

In Korea, fried chicken is more than just a meal—it’s a popular treat after a long work week. Family and friends gather over crispy chicken, drinks, music, and conversation. With more fried chicken shops in Korea than McDonald’s locations worldwide, it’s a big part of our culture. In denser cities, you can find one every couple of blocks.

That’s why we’re especially grateful to be carrying on a small part of that tradition right here in Waco. This past week, a customer shared that our wings have become her Saturday treat. Another told us he’s making a habit of stopping by because he believes that if he doesn’t support the small businesses he loves, they may not be around for long. Comments like these stay with us.

Growth doesn’t happen overnight, and everyone’s who stopped by has played a pivotal part in our story. Seeing 30% of our customers come back for another round has given us hope—not just that we can keep going, but that we can grow, extend our hours, and continue serving our community.

Our wings are battered with rice flour, so naturally GF, and making them crispy thin but packing a big crunch. 

Our sauces are homemade and gluten-free (except for the gochujang glaze), and every order comes with our jalapeño-infused pickled radishes—the perfect crunchy, tangy sidekick to your wings.

Hi Everyone! We are getting more and more corn dog orders! They outpaced wings by 6:1 this past weekend.

We’ve been limited to cooking 5 corn dogs at a time on one fryer but this upcoming weekend we’re going to free up both fryers so more of y’all can try them.

It was a tough call to not serve wings this coming weekend, especially because our regulars mostly come back for them. Wings are definitely coming back!

In the meantime, we’re actively hiring, training staffs and upgrading our equipment so we can extend hours and offer more on our menu (like tenders 🤤) instead of downsizing our menu! 🫰
