Today, approximately 6,000 dairy farms, with over 1.27 million cows each producing an average of 25,064 pounds of milk per year, continue the reputation for quality milk from Wisconsin. Obviously, curds are a Wisconsin delicacy. These chewy, squeaky, salty, snack-size gastronomic gems are nearly unheard of outside The State of Cheese. Yet, this humble cheese entered the global limelight in 2022, the year cheese curds became an official category at the World Championship Cheese Contest. Wisconsin’s own Decatur Dairy took home the top prize!
Cheese curds are a perfect snack when eaten fresh and squeaky. But if you’re looking to take it up a notch, this easy-going cheese loves the sweet, the savory, and the fresh. Favorite pairings might include hard cider with some prosciutto and pub mustard. Or go with the Wisconsin cult classic, deep fried dipped in ranch. Oh my, don’t get us started because we might not be able to stop!
