This easy meal prep, high-protein Cowboy Caviar Chicken Salad takes 10 minutes to prep, packs over 35g of protein per serving, and actually tastes better as the week goes on! 🤠🥗
Ingredients for salad (makes 8 servings - cut in ½ if preferred):
2 cans of Chicken Breast Chunks (canned) or rotisserie chicken
2 cans of unsalted corn
2 cans of black beans (seasoned if preferred)
3 bell peppers (1 red, 1 orange, 1 yellow)
1 bunch of fresh cilantro
1 medium red onion
1 packet of low-sodium taco seasoning (if preferred)
Simply Protein Tortilla Chips (found at Sam's Club)
Ingredients for Dressing:
2 limes
16 oz. lowfat cottage cheese
3 tablespoons of avocado oil mayo
Ground Black Pepper
Directions:
- Chop the bell peppers, red onion, & cilantro, add to a large mixing bowl
- Drain and rinse the black beans and corn, add to the mixing bowl
- Drain the canned chicken breast chunks, add to a bowl, shred with a fork, add to the large mixing bowl with other ingredients - mix
- In a blender, add the cottage cheese, mayo, juice of 2 limes, and black pepper - blend
- Pour the sauce over the salad and mix.
- If you prefer to add low-sodium taco seasoning, sprinkle ½ the packet over the salad and mix.
- Eat by itself or with Simply Protein Tortilla Chips!

Ingredients:
- 1 lb. of 90/10 or 93/7 Organic Lean Ground Beef (or turkey or chicken if preferred)
- 1 box of protein pasta
- 1 cup of low-fat cottage cheese
- 2 zucchinis, chopped
- 1 cup of part-skim shredded mozzarella
- 1 jar of pasta sauce
- Spices that I used on the ground beef: garlic powder, fresh black pepper, and italian seasoning
Directions:
- Preheat the oven to 400 (when ready to bake)
- Cook the ground beef (or other ground meat), boil the pasta, and cut the zucchini
- In a casserole dish, mix the cooked ground beef and pasta with the RAW zucchini (don't precook or else it will get soggy)
- Add the entire jar of pasta sauce and 1 cup of cottage cheese, mix again
- Add a cup pf part-skim mozzarella shredded cheese to the top
- Tightly cover with foil
- When ready to bake, keep the foil on and bake at 400 for 20 minutes

The easiest, coziest weeknight dinner you’ll make all season. 🍂 If you’re a busy sports mom trying to survive the weeknight rush, save this soup recipe! 🙌 Sun-dried tomato basil chicken and pillowy gnocchi made entirely in the Crockpot. Cozy, filling, and ready when you are! 👏🏼😋
Ingredients (serves 5):
- 1 package of Trader Joe's sun-dried tomato & basil chicken breast tenders
- 2 packages of Trader Joe's Gnocchi alla Sorrentina
- 1 package of fresh spinach
- 2 cups of chicken broth (I used bone broth for additional protein and health benefits)
- 1 can (14oz.) of diced marinated tomatoes
- 1 tablespoon of fresh garlic, 1 tablespoon of Italian seasoning and ground black pepper to taste
- Optional toppings: parmesan or ricotta cheese
- Optional: Fresh organic baguette for dipping
Directions:
- In a crockpot, dump the bag of sun-dried tomato & basil chicken breast tenders and separate using a fork.
- Pour the can of diced tomatoes, 1 cup of chicken broth, and add the spices. Stir. Cover and cook on high for 4 hours or low for 6-8 hours.
- Once the chicken is cooked, you can either shred it in the crockpot using 2 forks or remove it into a bowl, cut or shred and add it back to the crockpot.
- Add 2 bags of Gnocchi alla Sorrentina and 1/2 the bag of fresh spinach (approximately 2 cups). You can add 1 more cup of chicken broth at this time, if preferred. Stir and recover for at least 20 minutes or until ready to eat.
- Top with parmesan or a doll up of ricotta cheese and serve with a couple slices of fresh organic baguette to dip into the soup! 🍲
