Sunday gatherings call for Garlic Butter Akaushi Wagyu Petite Tender Bites with creamy horseradish dipping sauce—an appetizer everyone will gather around!
Teres major is a butcher’s hidden gem. Often called the petite tender for its small size and filet-like tenderness, this shoulder cut delivers rich beef flavor and a beautifully tender bite.
GARLIC BUTTER STEAK BITES
• 1½ lb Hook & Cleaver Ranch American Akaushi Wagyu teres major, trimmed and cut into 1-inch bites
• 2 tsp Hook & Cleaver Ranch Foundation Salt Rub, or to taste
• 1 tbsp avocado oil
• 3 tbsp butter
• 3 garlic cloves, minced
• 1 tsp chopped fresh rosemary
• 1 tbsp chopped parsley
Pat beef dry and season with Foundation Salt Rub. Heat oil in a large skillet over medium-high heat. Sear in batches for about 2 minutes per side, adjusting for thickness. Lower heat and add butter, garlic, and rosemary. Toss for 30–60 seconds until fragrant.
For a juicy medium-rare finish, pull the bites at 130°F and rest for 5 minutes. Finish with parsley and spoon the garlic butter over the top.
CREAMY HORSERADISH DIP
Mix together:
• ½ cup sour cream
• 2 tbsp mayonnaise
• 1 tbsp prepared horseradish
• 1 tsp Dijon mustard
• 1 tsp lemon juice
• Salt to taste
Chill until ready to serve.
Set out a platter with toothpicks, pass the dipping sauce, and let the family time begin.
