BACK TO SCHOOL MEAL PREP! 🎒🍱
Back-to-school season is officially here, which means our schedules are about to get BUSY!
I wanted to show you how I prep simple, protein-packed meals and snack trays ahead of time so there’s something ready to grab when the day gets hectic. This works whether you’re heading to class, clinicals, work or trying to get the entire family out the door. 😂
And this year is a BIG one in our house because Nick & Nate are beginning their senior year of college! 🎓❤️ I’m sitting here wondering where the years went because HOW are we already at senior year?! 🥹 Mama is so incredibly proud of you both!
To all of my students heading back this semester—especially my nursing students—have an AMAZING year. ❤️
A little planning now can make those crazy weeks so much easier.

🍗🫘🍚 QUICK MEAL PREP — about 55g of protein!
Here’s another example of why eating healthier doesn’t have to be complicated.
For this meal, I used:
🍗 4 oz chicken breast — ~35g protein
🫘 1 cup black beans — ~15g protein
🍚 1 cup rice — ~4–5g protein
💪🏾 Approximately 55g of protein in one meal!
This is the kind of meal prep I like, simple ingredients, filling portions, plenty of protein, and something you can realistically make even when life gets busy.
As a healthcare provider, I’m not interested in telling people they have to completely overhaul everything they eat. Small, sustainable changes matter.
Simple. Filling. Fuel your day. ❤️

Today I’m trying out my new hand blender while making one of my favorite healthy swaps, fresh homemade pico de gallo! 🍅🌿
Making your own dips at home is a simple way to:
✅ Use fresh ingredients
✅ Control the sodium
✅ Skip artificial preservatives
✅ Add incredible flavor to your meals
🍅 Homemade Pico de Gallo Recipe
Ingredients
• 4 Roma tomatoes, quartered
• ½ medium white onion, roughly chopped
• 1 jalapeño (remove seeds for less heat)
• ½ bunch fresh cilantro
• Garlic Salt
• Juice of 1 lime
• Salt & black pepper to taste
Directions
Pulse the tomatoes, onion, jalapeño, cilantro, and garlic separately using the chopper attachment. Combine everything in a bowl, add the lime juice, salt, and pepper, then stir gently. Refrigerate for 15–30 minutes before serving.
This fresh pico is delicious with tortilla chips, tacos, burrito bowls, grilled chicken, salads, and more!
