Come enjoy artfully crafted wines from some of the most interesting & unique vineyard sites in the h

Way out along Adelaida Road stands a little red farmhouse, home to Tolo Cellars. Josh Gibson, proprietor and winemaker, offers a sumptuous array of wines – Chardonnay, Zinfandel, Cabernet Sauvignon, and exotic Rhone blends – all sourced from vineyards tucked away in the rustic hills, where once frolicked the pioneers of the Adelaida township. This historically adventurous area, marked by rugged terrain, offers ideal hillside conditions for vines bearing hardy and distinctive wine grapes. Josh’s goal in winemaking is to allow these vineyards, each with its own “flora and fauna,” to express themselves in glorious harmony. Thus, all his wines are fermented on native yeast, allowing the robust and wild flavors of the vines to exude in the wines. The results are libations of uncommon depth and mysterious character – much like the surrounding hillsides. Josh opened his tasting room doors in December 2005, though he was well-versed in the Far Out lifestyle long before that. As assistant wine maker at Le Cuvier Winery for several years, Josh learned the tricks of crafting high quality wines in small lots. He continues that practice today, limiting production to just around 1,200 cases. Experience the best of westside Paso Robles wine country at Tolo Cellars.

Some fun history of our area!

You probably can't eat a peach for hours. However, depending on your ability to corner you can probably knock out Peachy Canyon Road west of Paso Robles solidly in under twenty minutes. You can also get a sense for how much the w**e industry has overtaken the former mercury mining areas once tied to Adelaida.

Peachy Canyon Road is an approximately 10-mile rural highway corridor located in the w**e region of the Santa Lucia Mountains west of Paso Robles. Peachy Canyon Road begins at Vineyard Drive and terminates at the Paso Robles city limit where it becomes Pacific Avenue.

Peachy Canyon Road is not named after peach flowers but rather a horse thief who was known at Rancho Paso de Robles as "Peachy." Peachy was known to use the canyon which now carries his name as a hideout prior to being apprehended. In 1886 the town site of Paso Robles would be plotted by the Southern Pacific Railroad. The corridor of Peachy Canyon Road was developed to carry traffic from Paso Robles westward to the Klau and Buena Vista mercury mines of Adelaida.

The community of Adelaida was a small mining town which located in the Santa Lucia Mountains west of the Paso Robles. Adelaida was founded in the late 1860s around the Klau and Buena Vista Quicksilver (mercury) mines. The Klau Mine is the oldest in the Adelaida area having opened in 1868. The Adelaida community would obtain Post Office Service in 1877 and would grow to a population of approximately 500 by the early 1880s.

The Adelaida Post Office closed in 1936 as it became easier to reach the mercury mines on trips originating from Paso Robles. Adelaida would decline to a ghost which now only has a handful of remaining structures from the mining heyday. The mercury mines in the area would operate until 1970.

Mission completed on another life changing couple of days. Today we started at the Naval Academy where we had a special viewing of the morning colors along (raising of the flag) with the playing of the National Anthem by the Navy band. Then we to my favorite place, Fort McHenry. Fort McHenry was the fort on which the Star Spangled Banner was written and here our Veterans were able to fly a flag over the fort that they could take home. The end of the night was the topping on the cake with hundreds of community and family at the airport to welcome their soldiers home. This was something that so many of our veterans never received and there was not a dry eye. We both meet so many amazing veterans. We were able to listen to them tell stories, share laughs, share a hug when a memory got to be to much, watch them say hello and good bye to old friends on the wall and make new friendships on the trip with other veterans who experienced the same things and understand them. I had many tell me they would never forget this trip and so many said they finally felt appreciated for their service. Please let us know if you would like to learn more about Honor Flight. Whether it is a Veteran you want to go on the trip, want information on how to go as a gaurdian or want to donate to this all volunteer run organization.
