Pictured here is the progression of bean maturity in a Rattlesnake Pole Bean. If you aren’t a lover of pole beans, here is a shameless plug for them! They are one of the best plants for a grower because they are so forgiving. Check this out:

🌱If pods are harvested while young and tender, then they can be prepared and cooked like any other green bean. Or even eaten fresh for a delicious, crunchy snack

🌱 if pods are past the tender stage, but the seeds inside aren’t yet fully matured, then you have yourself some delicious fresh shelled beans. These can be cooked like any dry beans except you get to skip the soaking step because they are still full of their fluid! Freshly shelled beans also tend to be easier on the digestive track for those folks who are sensitive to beans. Please note – freshly shelled beans need to be stored in the fridge.

🌱if pods are quite bumpy and leathery and squishy when you press them, then chances are the seeds inside the pole bean have matured enough to be dried and saved for seed to plant next year! Or simply dried and stored for eating through the winter.

Let’s give some love to the amazing pole bean 👏 If you haven’t tried planting these yourself, give it a chance next season. You won’t regret it!
