Thai Basil Chicken Fried Rice
My flavor secret:
🌶️CHIN-su hot sauce for a bold spicy finish.
🥢CHIN-su fish sauce for rich, authentic umami that takes this dish to the next level.
Ingredients
For the chicken
* 2 boneless skinless chicken breasts, cut into small slices
* 1 tbsp sesame oil
* 1 tsp garlic powder
* 1 tsp onion powder
* ½ tsp black pepper
* ½ tsp paprika
* Salt, to taste
For the fried rice
* 3 cups cooked and chilled jasmine rice
* 2 tbsp oil
* 4 garlic cloves, minced
* 2–3 Thai chilies, sliced (or 1 tbsp chili paste)
* 2 tbsp green Thai curry paste
* 1 small onion, sliced
* 2 eggs, lightly beaten
* 1 red bell pepper, sliced
* 1 yellow bell pepper, sliced
* 3 tbsp soy sauce
* 1 tbsp oyster sauce
* 1 tsp CHIN-SU fish sauce
* 1 tsp CHIN-SU hot sauce
* 1 tsp sugar
* 1 cup fresh Thai basil leaves (or regular basil if that’s what you have)
* 2 green onions, sliced
* Lime wedges, for serving
Instructions
1. Cook the chicken
* Season chicken with garlic powder, onion powder, paprika, black pepper, and salt.
* Heat 1 sesame oil in a large skillet or wok over medium-high heat.
* Cook chicken for 5–7 minutes until golden and cooked through. Remove and set aside.
2. Build the flavor
* In the same pan, add 1 tbsp sesame oil.
* Sauté garlic and chilies for 30 seconds until fragrant.
* Add onion and bell pepper. Cook for 2–3 minutes.
3. Scramble the eggs
* Push vegetables to one side.
* Pour in beaten eggs and scramble until just set.
4. Add rice
* Add the chilled rice and break up any clumps.
* Stir-fry for 2–3 minutes.
5. Season
* Add soy sauce, oyster sauce,sugar, green Thai curry paste, chin-su fish sauce and chin-su hot sauce
* Toss until the rice is evenly coated.
6. Finish
* Return the chicken to the pan.
* Add basil leaves and green onions.
* Stir until the basil wilts, about 30 seconds.
7. Serve
* Squeeze fresh lime juice over the rice and serve immediately.

CHILLI OIL GARLIC NOODLES
A quick, glossy, street-style noodle dish packed with crispy garlic, aromatic chili oil, and rich umami depth from CHIN-SU Fish Sauce, finished with a bold spicy kick from CHIN-SU Hot Sauce. Bold, addictive, and ready in minutes.
Ingredients
Noodles:
* 200g egg noodles or ramen noodles
* Salted water for boiling
Garlic Chili Oil Sauce:
* 3 tbsp sesame oil
* 5–6 garlic cloves, finely chopped
* 1–2 tsp chili flakes (or chili paste)
* 1 tbsp soy sauce low sodium
* 1 tbsp CHIN-SU Fish Sauce
* 1 tsp sugar
* 1–2 tsp CHIN-SU Hot Sauce (adjust spice level)
* 2 tbsp hot noodle water
Toppings (optional but recommended):
* Spring onions, chopped
* Fried egg
* Sesame seeds
Instructions
* Boil noodles until just tender
* Reserve 2–3 tbsp noodle water
* Drain and set aside
* Heat oil in a pan on medium heat
* Add chopped garlic and fry until golden and crispy
* Add chili flakes and stir for a few seconds until fragrant
* Add soy sauce
* Add CHIN-SU Fish Sauce for deep umami richness
* Add sugar and mix
* Add CHIN-SU Hot Sauce for spicy kick
* Pour in a little noodle water to loosen sauce
* Add cooked noodles into the sauce
* Toss well until every strand is coated and glossy
* Add spring onions
* Top with fried egg
* Optional extra drizzle of CHIN-SU Hot Sauce for heat lovers

Ingredients:
Chicken
- 1 skin on chicken thigh
- 1 tsp salt
- 1 tsp white pepper
- 1/2 tsp five spice
Vietnamese Golden Lava Sauce
- 1 tbsp neutral oil
- 2 cloves garlic, minced
- 1 tbsp CHIN-SU fish sauce
- 2 tbsp CHIN-SU hot sauce
- 1 tbsp sugar
- 1 tbsp lime juice
- 1 tbsp water
Other
- 2 cups cooked jasmine rice
- Vegetables (cucumber, pickled carrots, cilantro)
- Lime
Directions:
1. Season your chicken thigh with salt, white pepper, and five spice on the meat side.
2. Over medium heat, sear your chicken skin side down for 8 min until crispy, then sear the other side until cooked through.
3. In the same pan, fry your garlic in the rendered chicken fat until golden. Add your hot sauce, fish sauce, lime juice, water, and sugar, then stir and simmer for 2 minutes until a glaze forms.
4. Julienne your carrots, then mix with a touch of rice vinegar, sugar, and salt.
5. Cut your chicken, then serve over rice with veg and limes, and pour golden lava sauce over the top.
