Sourdough discard scallion pancakes | 蔥油餅
(with garlicky dipping sauce)

Recreating package free favorites inspired by the Taiwanese classic.

You’ll need:
270 grams all purpose flour (about 1 3/4 cups)
90 grams warm water, + 1-2 tbsp if needed (a little less than 1/2 cup)
230 grams active sourdough starter / discard (about 1 cup - I keep my starter at 100% hydration)
5 grams kosher salt (about 1/2 tsp)
4 - 5 green onions (aka scallions)
90 grams roasted sesame seeds (1 tbsp)
40 grams vegetable oil (about 3 tbsp)

Garlicky dipping sauce
4 - 5 garlic cloves
1 tbsp olive oil
1/4 cup soy sauce
1 tbsp sesame oil
2 tbsp rice wine vinegar
