The first bite of grilled fish, smoky and clean, just before you squeeze the lemon.
That's the moment the spices matter. Not in the marinade, not in the rub, but in what hits the tongue first: salt, heat, citrus, green.
For halibut or cod, something delicate, try Lemon Pepper or Herb Infused Salt. The lemon wakes up the fish without fighting it. For salmon or tuna, something with weight, reach for Aleppo Pepper or Sumac. They carry the char without turning bitter. Asparagus season is short. This is the dish that makes you slow down and pay attention.
Toss spears with olive oil, salt, and a generous hand with Lemon Pepper. Grill until charred at the edges, still crisp in the center. The lemon peel wakes up the sweetness, the black pepper grounds it.
