Raised above his family’s Chicago bakery, Andrea Spella began drinking espresso when he was old enough to raise a cup to his lips. For quality and consistency, this Portland, Oregon roaster develops deep relationships with coffee growers and roasts the beans himself, always aiming for the “sweet spot.” Somewhere between a light and dark roast, his beans boast a balance of sweet and bitter with a dark chocolate flavor and caramel finish. Coffee is what you put into it. For Spella, it’s heart and soul.

For us, coffee has never just been coffee.
It’s the smell of a fresh roast in the morning. The ritual of dialing in a shot. The first sip at the bar. A caffè shared with a friend, a quick conversation with a familiar face, or a quiet moment all to yourself.
It’s the farmers, producers, roasters, baristas, cooks, makers, and customers who make a caffè a community.
After 20 years of Spella, we’re still deeply in love with the simple, beautiful ritual of serving great coffee — and even more grateful for everyone who has pulled up a chair, stood at our bar, visited one of our carts, shared a drink, or made Spella part of their day.

☕️✨ Today calls for a cup of ambition.
Today, September 25, 2026, Portland is officially celebrating Dolly Parton Day — honoring a legendary icon whose legacy reaches far beyond music, into kindness, generosity, and children’s literacy. 💕📚
And what better way to celebrate than with a little Dolly wisdom:
“Tumble out of bed and stumble to the kitchen, pour myself a cup of ambition.”
So we’re raising a cappuccino to Dolly — and to big hair, rhinestones, simple wisdom, dancing, singing, and a whole lot of joy. 🦋✨
Today’s free community celebration brings Portland together with a singalong and performances from Cooper Hays and her band Cooper and Her Daddy Issues, plus special appearances by Poison Waters, Storm Large, and members of Pink Martini.
Because sometimes a cup of coffee is more than coffee.
It’s a little ambition.
A little courage.
A little kindness.
And a reminder to make the world a more joyful place.

JJ was part of the Spella family years ago, working behind the bar and as a roaster, and we’re so grateful that our friendship has continued all these years. One of the things we love most about being part of the Oregon food community is getting to work alongside people who care deeply about what they do — and our friends at Bee Way Honey Pollination are exactly that kind of partner.
Family-owned and operated in Damascus since 1993, Bee Way’s story began with founder Leonid Zaytsev, who first discovered beekeeping while growing food in his backyard in Ukraine. What began as a way to improve pollination in his garden grew into a lifelong vocation — and eventually into the family business that helps pollinate farms throughout the Pacific Northwest and produces beautiful raw, natural honey from Oregon and Washington. 🐝🌲
We’re grateful to bring a little of that work into the caffè.
Their honey is a beloved ingredient in our house-made chai, Hot Honey Lattes, and our Caffè con Miel — where honey and espresso come together in one of our favorite simple combinations.
For us, this is what partnership is about: knowing the people behind the ingredients, supporting the work happening in our own region, and creating something together that our community gets to enjoy.

20 years of Spella Caffè. ☕️
On October 6, we’ll celebrate two decades of roasting, pulling shots, sharing tables, building relationships, and—most importantly—being part of a community.
Because the foundation of Spella has never simply been espresso.
It has always been partnership.
Partnership with our gracious crew who carry the Spella ethos into every interaction.
Partnership with the folks who walk through our doors and savor the espresso, the hospitality, and the experience.
And partnership with the incredible businesses, makers, chefs, markets, hotels, cafés, restaurants, and community spaces who serve Spella alongside us every day.
You are a huge part of our story.
So, over the next month or so, we’re going to be turning our media attention toward you—the exquisite partners who have helped make these 20 years possible.

Gorgeous day for a fantastic burrito brunch at The Daily Feast - Diner ! These folks don’t miss. The vegan burrito was stellar, fresh fruit, and Spella coffee (same beans, same machine but their drip is better than ours… we think it’s their own little magic they add in)! 🫶🏼✨
Exquisite espresso and warm hospitality are the foundation but it’s all the intentional small acts of service that build an environment and community that people return to for 20 years! Free sparkling water to cleanse your palate before you partake. Demitasse ceramic cups to sip at the al banco while sharing meaningful conversation. Community crossword dazzled with customer doodles while savoring a quiet moment away from work. Regulars who feel cared for daily and offer genuine gratitude in return. Aesthetics that tell a story. Being known by name and having pieces of your life remembered by baristas who listen and serve with great care. Thank you for all the small little ways this community fills our hearts and for letting us love on you when you’re with us!☕️🫶🏼

Hey Spella friends and family, we are down a body for a bit resulting in lunch closures Monday-Thursdays 11-12 this week for sure!
DS is taking some time to recover from an injury (she’s still workin away behind the scenes on projects), and Cass and Austin will graciously hold down the fort. We look forward to seeing you and serving you this week, and appreciate your understanding and support!
Also, we’re drumming some things to celebrate our big anniversary month in October … stay tuned!

There are places that simply serve food and coffee—and then there are places that make you think a little differently about where those things come from.
That’s what we love about The Ground in Carlton, Oregon.
The Ground is an ecosystem built around a simple, beautiful idea: everything is connected. What begins in the soil at Tabula Rasa Farms makes its way to the table, into the kitchen, into the guest experience, and back into the land. It’s regenerative farming, thoughtful food, deeply considered hospitality, and a genuine invitation to slow down and pay attention.
That story takes many forms—from the fields and pastures of Tabula Rasa Farms, to The Pub and Grounded Table in nearby McMinnville, and Inn the Ground where guests can wake up surrounded by the land, where the farm’s bounty becomes beautifully thoughtful, seasonal food on the table.
Spella Caffè is proud to be part of that story through coffee.
At Spella, we’ve always believed that great coffee is about more than what’s in the cup. It’s about the hands that grow it, the people who roast it, the care that goes into preparing it, and the people you share it with. We roast in small batches, work closely with coffee farms and cooperatives, and stay rooted in the traditions of Italian espresso while bringing our own Oregon perspective to our Spella Caffè craft.
So partnering with The Ground feels less like putting our coffee into the hands of another partnership, and more like joining a conversation we already care deeply about.
