We’re kicking off the Roux weekend with two powerhouse women Dani Dillon (CARE OF CHAN) and Shanika Hillocks to discuss hospitality, connection, and the importance of creating meaningful experiences in an increasingly disconnected world - what that means to them right now, in their work, with the brands they collaborate with, and in the way they move through the world.

Dani is a Partner and the Director of Production at Care of Chan, bringing her deep expertise across hospitality, fine dining, and consumer brands to precise ex*****on of their events. In 2019, the inaugural year of Roux, we welcomed Sue Chan (founder of Care of Chan) so it only seems fitting to bring one of her partners to this year’s line-up. She’s worked in restaurants and hospitality most of her life and held prior roles at community-focused startups like The Wing and Michelin-starred restaurants like La Vara. And from what we can tell, she knows how to travel well and is the kind of producer we dream of!

Xcelerate and Prosper Portland are hosting the Secret Sauce panel again this year during the Roux weekend. An inspiring panel conversation featuring women in food, beverage, and CPG sharing honest stories about growing their businesses on their own terms.

The panel theme is placemaking and the role that physical spaces (cafes, shops, cities, regions) play in creating community and informed decision making about when and how to sustainably expand product offerings.

THE BAGEL QUEEN 🥯 is in the house! Founder of the Milwaukie’s farmer market’s fav bagel vendor, Pipsqueak Bagels , Madilyn has been mastering her bagel craft since 2015 while building her food career around Portland. She’s infamous for perfecting the perfect bagel sandwich on the perfect bagel. She is a Capricorn after all, we’d expect nothing less! Not to mention her one-off seasonall specials like funfetti cream cheese on a blueberry bagel - YUM. We’re so excited to finally welcome her to the Roux line-up this year at the 🌶️ Secret Sauce Panel 🌶️ in partnership with Xcelerate and Prosper Portland on Sunday, October 11th.

If you didn’t hear already - we’re at Gado Gado Saturday night, Oct 10th during Roux. Mariah Pisha-Duffly Mariah Pisha-Duffly has spent her career reimagining what hospitality can look like by building structures that value care, collaboration, and the actual humans who make restaurants run. She started behind the counter at a chip shop and worked every front of house job there is before helping open one of Portland’s most beloved restaurants in a crumbling Hollywood strip mall that she and her husband transformed by hand.Weeks after Gado Gado opened, a baby arrived. Then a pandemic. They turned the whole thing into a takeout concept overnight, built a sister restaurant out of the pivot and became one of Portland’s favorites spots. Multiple James Beard nominations, NYT best restaurants, and a dining room that still feels like a party you don’t want to miss, we cannot think of a better place or person to host our Saturday night dinner. Mindy Crosato started Decadent Creations out of her house in 2010, up at midnight baking, selling all day at the farmers market, one woman and a dream. In 2017 she opened her brick and mortar in Portland, and then opened a commissary kitchen next door to support other scratch food businesses because that’s just who she is.

Oh and she’s also a Chopped champion. Season 23, chocolate rush. No big deal.

So excited to welcome our neighbor from the north - Melissa Miranda Melissa Miranda owner of Musang in Seattle’s historic Beacon Hill neighborhood and Kilig in Seattle’s Filipinotown. We love Melissa’s commitment to community spaces and believing sitting around a table is something bigger than just food. She gets it. Of course we’d be lying if we said we weren’t also excited about what’s she going to cook up with the Gado Gado team 👀
