how we're eating more vegetables right now ๐ฅ๐ฅ๐ฏ for variety, nutrients, flavor, fiber, and just plain enjoyment ๐
start with what you know ๐ฅ Do you love carrots but have no idea where to begin with artichokes? Start with the familiar and learn one new thing at a time.
think vegetable-first for meals ๐ฅ Instead of choosing your meal on starch or protein, think about what vegetables you've got - if brussels sprouts, maybe you'll make a one-pan roast. If you've got a ton of tomatoes, maybe you'll roast them and make a pasta sauce. from there you can add a starch and protein!
try others' recipes ๐
if you're unsure of how best to use something, get out some library cookbooks or watch a youtube video to try for yourself.
hide them ๐ฟ If you have picky eaters in the house (including yourself), hide veg in sauces, add to smoothies, chopped small in salads, etc.
showcase them ๐ซ In the opposite direction, prepping fruit & veg beautifully may make you more likely to want to eat it. Put fruit in bowls where people will grab them, and put veg front and center in your fridge, just like how you'd want to see them at the grocery store.
prep vegetables ๐ฅฆ At least a little bit - it'll make your meals so much easier to whip together last minute. Chop, slice, roast, however you can use them best for you.
store them well ๐ฝ Either learn the best way to store what you've got, or freeze if you're not sure you'll use everything right away. If they go to waste, it sure won't make you want to buy them again.

loooove these little snickers-inspired bites. the longest part of making them is melting the chocolate (so, not long) and they're the ideal snack at the end of the day. ๐
take the softest pitted dates you can find, fill with peanut butter + peanuts if you like, then top with melted chocolate and a sprinkle of sea salt. fridge + eat! โบ๏ธ๐ฅ๐ซ
