Adana Kebab by Executive Chef Akif

At Another Time & Place Grille, the Adana kebab is made the way it has been made for generations in southern Turkey, and Chef Akif doesn't cut corners on any step.

He starts with fresh ground lamb and works in red pepper flakes, salt, and just the right amount of fat for richness. Then he kneads it by hand until it binds, with no fillers and no shortcuts. Each kebab is pressed by hand onto a wide, flat skewer, his fingers leaving the classic ridges along the meat.

It goes over high heat and is grilled to order until the outside is smoky and lightly charred and the inside stays juicy and full of spice. Chef Akif turns every skewer himself and knows it is ready by look and feel, not by timer.

The plate comes out on warm flatbread that soaks up every drop, with grilled tomatoes and peppers, sumac onions, fresh parsley, and rice pilaf on the side. It is bold, a little spicy, and fresh off the grill every time.
