Meal Prep Goals! These Chicken Burrito Bowls are a delicious, balanced meal perfect for a busy week. What’s your go-to topping for burrito bowls?
Recipe:
Ingredients:
2 chicken breasts, diced,
1 tsp chili powder,
1 tsp cumin,
1/2 tsp garlic powder,
Salt to taste,
1 cup brown rice,
1 bell pepper, chopped,
1 can black beans, drained and rinsed,
1 avocado, diced,
1/2 cup corn kernels (fresh, canned, or frozen),
1/2 cup shredded cheese,
Salsa, for topping,
Sour cream, for topping
Season and cook diced chicken breast with your favorite spices (think chili powder, cumin, garlic powder, and salt).
While it cooks, make brown rice and prep your veggies (chopped bell peppers, black beans, avocado, and corn).
Layer in meal prep containers: start with rice, add the chicken, then veggies, and top with shredded cheese.
Add salsa and a dollop of Sour Cream for a finishing touch!
