Our pepperoni is one of those ingredients that can sometimes be a little tricky to get our hands on… BUT WE GOT IT BACK. 🙌

Soft, fluffy gluten-free dough rolled up with vegan pepperoni + melty vegan cheese, then baked until golden. Savory, cheesy, a little crispy around the edges and SO GOOD warmed up. Basically pizza’s swirly little cousin, and we missed her. 😂

Changing my diet years ago felt like SUCH a transition. Learning how to make common ingredient swaps, figuring out what my body could tolerate, and basically relearning how to eat and bake.

Then years later, I started Ruby Baking Co. and got to take everything I’d learned through my own dietary restriction journey and turn it into goodies that so many of us can enjoy. 🤎

Taking out the eggs, dairy, wheat—and a whole list of other ingredients—and STILL making something taste really freaking good is basically a science. 😂 Even now, new items can mean lots of trial and error. But over the years, I’ve gotten pretty dang good at knowing what works, what needs to be swapped, what needs a little extra something…

And every once in a while, something just WORKS.

This was one of those times.

FOCACCIA BREAD IS HERE!!! 🌿🍞

Soft and fluffy on the inside, beautifully golden on top, with that classic slightly chewy focaccia texture and plenty of rosemary baked right in. Savory, herby, and SO good warmed up with a little olive oil for dipping.

And y’all… I am so happy with this one. 🙌
