Patria is the brainchild of Paolo Kautz, founder and former chef at Cafe Rustica, and his business partner, Gloria Magdirila, whose family has owned the building since the 1960s. With a full bar, a w**e list dominated by local reds, Kautz’ deft hand in the kitchen and Magdirila’s welcoming presence in the front, Patria is the go-to place in Salinas.

Early Access at Patria starts nightly at 4:00 p.m. for the first 10–15 guests. Think off-menu dishes crafted by Chef Jose Aranda Aguilera, built around the freshest finds of the day.
