The final course deserves its own ritual. Fragrant rose and vibrant hibiscus come together in this naturally caffeine-free tea, creating a cup that is floral, refreshing, and wonderfully soothing. Paired with something sweet from our dessert menu, it’s an invitation to linger at the table just a little longer.

The unveiling is part of the experience. Beneath a golden wheat-dough purdah lies tender braised lamb shank and aromatic aged basmati, carefully prepared to preserve every layer of flavor. Paired with cooling raita and bone-broth salan, our Lamb Shank Purdah Biryani brings ceremony, craftsmanship, and the pleasure of sharing to the Khaki table.

From the streets of Kolkata to the table at Khaki. Our Jackfruit Cutlet pairs tender jackfruit and potato with a beautifully crisp crumb, accompanied by pickled vegetables and mustard mayo. It’s our interpretation of a beloved classic, preserving the comfort and character of the original while giving it a distinctly contemporary expression.

Pani puri has always been about the experience: the delicate crunch, the burst of flavor, and the joy of enjoying it all in a single bite. Our interpretation pairs crisp shells with creamy avocado, young mango, jicama, and bright passion fruit water, bringing a fresh, tropical perspective to one of India’s most iconic street foods.

Two beloved desserts come together in an unexpected way. Our Gulab Jamun Crème Brûlée pairs the comforting sweetness of gulab jamun with the delicate richness of classic crème brûlée, finished with its signature caramelized top. A meeting of Indian nostalgia and French technique, crafted for a final course worth lingering over.
