We are bringing back the cherries tomorrow! And if you’re curious about what’s inside: chocolate mousse flavored with kirsch and cherry compote with more kirsch at the center. This is an incredible dessert!
For this one, increase the volume. In a canelé, this is what caramelization should sound like. And inside? A soft pillow of goodness with a hint of orange zest flavor. Enjoy!

Do I really need to explain how decadent these desserts are becoming? The bakery decided that this weekend will be shiny, red, with cherry compote, and some kirsch. Prost!

We made a small batch of canelés this morning at Mille, put that on the community table to take a few pictures, and all of a sudden everything was gone. But the good news is, it’s approved by the staff and we’ll start making some tomorrow morning (Saturday 09/19).
A canelé is a traditional pastry from the Bordeaux, made in copper molds, with a dark thick caramelized crust and a soft custardy center. In the traditional recipe, the pastry is flavored with vanilla and rum. We used vanilla, triple sec, and orange zest. We’ll start small with these and increase the production slowly over the next few weeks.

We sold an insane amount of moules frites today! It must be the weather that tricked us into believing we were no longer in the high desert of New Mexico but instead on the shores of Belgium. Thanks to our friends at Above Sea Level for bringing in fresh seafood to the desert, that’s how we can recreate this iconic dish at Mille.

We would not be a true French cafe without our tuxedo cat, resident of Mille since 2022. He is keeping an eye on the parking lot tonight until brunch starts tomorrow morning. We hope you all are having a fantastic Labor Day weekend!
