fry over medium heat
sauce
tomatoes 3
onions 3
bay leaf 4
guajillo peppers 12
salt, pepper
smoked paprika
water 2 cups
cook for 1 hour
remove the bay leaf and blend the rest until smooth
return the meat and simmer for 8–10 hours
remove the meat and shred it with a fork
then mix with the sauce
simmer for a little longer, and it’s ready
for one loaf you’ll need
540g bread flour
100g active sourdough starter
350g warm water
11g salt
mix water and sourdough starter well
then add salt, mix
at the end add your flour
mix just until it all comes together
cover and leave it for 30min
after 30min pull from each side
let it rest for 20min
20min later make first fold as shown on video
repeat this process 3times every 20min
after the last fold leave the dough to rest for another 30min
shape your bread,
put it in the banneton basket,
cover with plastic wrap and towel
place it in the fridge overnight
in the next morning take out your bread from the fridge
and leave it in the warm place for 2hrs to rise
preheat oven to 445f with Dutch oven inside
score the bread, make a cut at a 45degree angle
carefully place it into hot Dutch oven
add small scoop of ice to both sides
bake 25min with lid on
and 20min with lid
