🌾 Fresh-milled flour is pretty amazing!
Meet Jerald in a Jar 2.0. 😂 My original sourdough starter, Jerald, survived for about three years… until I managed to kill him. So, we’re starting over!
This is morning 3 of a brand-new sourdough starter made with freshly milled flour, and look at that activity! 👀 All of those little bubbles are signs of fermentation happening throughout the jar.
One of the things I love about fresh-milled flour is that you’re using the whole grain — bran, germ and endosperm. That means there are naturally more nutrients available to help feed a sourdough starter, and whole-grain flour can make a new starter pretty active.
Now, Jerald 2.0 isn’t ready to make bread just yet. New starters can have a big burst of activity in the first few days and then quiet down while everything gets established. So we’ll keep feeding him and see what happens!
I thought it would be fun to share the process as we go: fresh grain ➡️ fresh flour ➡️ sourdough starter ➡️ lots of fresh-milled baking to come. 🌾🤎
Welcome to the farm, Jerald in a Jar 2.0. 😂
