"Sun Dried Tomatoes" in the air fryer! 🍅
Every year I have an abundance of cherry tomatoes. This year so far I have made salsa and these savory "sun-dried tomatoes". I didn't realize how easy it was to make!
I never buy the jars of sun-dried tomatoes because they get kind of pricey. Now I can just make large batches of my own at home. To store these I just freeze them in a ziplock bag. But you could also store it in oil in a jar.
Step 1: Halve your cherry tomatoes or quarter your Roma tomatoes.
Step 2: Drizzle with olive oil and season it with your favorite seasoning. I used some salt and garlic. You could also leave them as is and not season them at all.
Step 3: Place them skin side down on a piece of parchment paper on your tray or rack.
Step 4: Air fry at 250°F (120°C) for 40 to 60 minutes do it that many times because you'll have more airflow.
Step 6: Let them cool completely. Store them in an airtight container in the fridge with olive oil or freeze them.
They are quite delicious out of the air fryer. Enjoy!

We went turkey hunting for the first time and unexpectedly came upon a river we had to cross. She immediately insisted on carrying me across and wouldn't let it go, no matter how many times I said I was fine. She knew how much I hated being wet (and cold). What an emotional rollercoaster that I can't even put into words or begin to explain. Love this kid. 🥰♥️
From the archives! Visited Seattle with my big, lil-brother in 2018. It was our very first trip together as adults! He even paid for my trip as a birthday gift. We almost missed our flights home and I was hungover on the plane. Oh, the memories!

Took a road trip to Kentucky and Cincinnati, Ohio to visit the Ark Encounter, The Creation Museum and The Union Terminal.
The Ark Encounter was huge!! What a perspective. We got a tour guide educating us there and at the Creation Museum. We learned so much and it was a sight to see. Saw some dinner-plate sized hibiscus 🌺 flowers, I was mind-blown. The Union Terminal was a hidden gem! The natural History museum inside it was never, ending. By far the most thorough museum we've ever been through. Definitely got our steps in! It was all so amazing honestly, 10/10.

Homegrown herbs, harvested this morning: Rosemary, thyme, spearmint, peppermint, Genovese basil, holy tulsi basil, purple ruffle basil, and lemon balm.

Had such a great time with some friends and the MDC hosts for their Canoe, Cast, and Chill event on the river. It was our first time ever canoeing down a river and our first time ever fishing.

Photo dump! A couple of weeks ago we took a roadtrip and spent the weekend in Minneapolis. We had some of our favorites: Korean BBQ and Kung Fu Tea. We got to visit some Asian markets and the Mall of America. Jacob and I had a date night to see Martin Garrix! Heard some great beats, saw some cool lasers, danced all night, and even made some new friends. Before we headed home, we all had some excellent food with excellent service at Normandy Kitchen & Bar. It was a great time!
