Simple ingredients. Complicated process.

At first glance, the ingredients are pretty basic: egg whites, sugar, almond flour, and a little flavoring. That’s it!

But the magic (and sometimes the frustration 😂) is all in the technique.

The whipping, the folding, the consistency of the batter, the piping, the resting, the oven temperature, the baking time… even the weather can make a difference! I always say they are a dramatic little cookie!

One little change can be the difference between beautiful, smooth, perfect little feet and a tray of “well… we tried.”

So the next time you bite into one of my macarons, just know there’s a LOT of technique, patience, and love that went into that little cookie….and maybe a few curse words!

And yes… I weigh everything! ⚖️😆
