Decided to try making Basil Salt and it was easy and wow is it powerful! A sprinkling on tomatoes (especially in the winter !) or fish or eggs will certainly be a game changer!!!

Here’s how I did it!
2 parts firmly packed basil leaves, clean and fairly dry
1 part kosher salt (do not use fine salt)

1. Blend in the food processor
2. Spread out on parchment or dehydrator sheets and dehydrate (I used a dehydrator @155 degrees for 12 hours) but you could use your oven on the lowest setting
3. Once brittle and dry; cool to room temperature
4 process through food Processor again to break up!

Back when I worked for Williams Sonoma I used to do my grocery shopping and plan a weeks worth of dinners so that during the week we were prepared!

Now with only 2 of us, we eat
out a lot. I also find it difficult to cook for just two without having a whole lot of leftovers.
this weeks plan:
-uses the same protein two days in a row
-Monday & Tuesday (two very busy days) everything is prepped so I just have to pop it in the slow cooker before I leave in the am
-back ups are created by what’s in the freezer or can be cooked quickly.

What’s your weeks dinner strategy?
(And yes I do type up my menu so no one goes rogue!! Ummm Scott!)

The first of the season … homemade pesto!!! This time I made it with pistachio and pecorino!

Chef tip: if you’re going to freeze pesto - freeze before adding the cheese and butter!

Happiest of Father’s Days to all the dads both here and in heaven.

The trajectory of my life changed drastically upon the death of my sweet dad right before I turned 16. I’m unsure of what life would be like today if it were different but I hold close the lessons he and my mom taught us; the generosity with which they lived their lives and the value the placed on family and friendships.

Making my mom and dad proud is still a driving force to the decisions I make daily.

I only hope Scott and I can be as amazing examples to Jack as I had.
