6-Day Calm & Satisfied Salmon Prep

6 nourishing dinners. One prep session.

Ingredients
• 6 (4 oz) salmon fillets
• 1 cup polenta (cornmeal)
• 4 cups unsweetened almond milk
• 1 Tbsp olive oil
• Green beans
• Baby carrots
• Diced tomatoes
• Onion
• 1 carrot, diced
• 1 Tbsp chopped garlic

Directions
• Bake polenta (cornmeal, almond milk, olive oil) at 350°F for 50 minutes, stirring halfway.
• Roast tomatoes, onion, carrot, and garlic with a little olive oil at 350°F, stirring halfway.
• Bake salmon at 400°F for 20 minutes.
• Steam the green beans and carrots.
• Divide into 6 meal prep containers and top with the roasted tomato mixture.

🥯 High Protein Cottage Cheese Bagels

Blend 1 c oats into flour. Mix with 2 tsp baking powder. Blend 1 c cottage cheese, 1 egg (reserve 1 Tbsp), and 1 tsp lemon juice until smooth. Combine, rest 10 min (or 1 hr refrigerated). Divide into 4 bagels, brush with reserved egg, top with everything bagel seasoning, bake at 375° for 30 min. Serve with an omelet made from ½ c egg whites + 1 oz cheddar inside each bagel.

Per bagel: 136 cal | 11.2g protein
As breakfast sandwich: 320 cal | 30g protein | 16g net carbs

Habits That Travel

The healthiest version of you doesn’t stay home when you travel…she travels with you.

This weekend was Grandparents Weekend, and I wanted every ounce of my energy focused on making memories with my granddaughters, not recovering from food choices that left me feeling sluggish.

So I packed what I needed.

🥣 Breakfast: Cottage cheese, plain Greek yogurt, protein powder, ground flaxseed, and berries.

🫐 Snack: My High-Protein Blueberry Banana Breakfast Bake.

🥗 Lunch: A big mixed green salad with grapes, walnuts, and balsamic vinegar.

🍤 Dinner: My daughter made the most incredible grilled lime shrimp kabobs with rice, beans, avocado, corn, tomatoes, fresh salsa, and goat cheese. It was absolutely divine…fresh, nourishing, satisfying, and completely guilt free.

I also kept the promises I make to myself. I got my workout in before the day began, protected my sleep routine, and chose connection over cravings.

Because that’s what recovery really looks like.

Not perfection.
Not restriction.
Just building a life that’s so full, food is no longer the main event.

Yesterday I posted a Reel about how bringing fruit to my granddaughter as a healthy treat helped normalize what would be considered a nice gift. Someone commented that grandparents should “leave the healthy stuff to the parents.”
I see it differently.
As grandparents, we have the incredible privilege of influencing the next generation. We teach kindness, faith, work ethic, respect…and yes, our food choices teach too.
If I bring apples, grapes, and berries instead of candy and cookies, I’m not replacing a parent—I’m reinforcing healthy habits.

To me, loving my grandchildren means doing everything I can to help them grow up healthy. That’s one of the greatest gifts I can give them. Are there purposeful things you do to leave a mark on your next generation!? …asking for a friend 🤭
