It was an Indian food kind of night πΆοΈπ± with this cozy dinner at India Masala House on High Street in Brattleboro, VT.
We shared:
πΌπ₯¦ Vegetable Pakora with crispy chickpea batter, pickled onion & chutney. Yum yum.
πΌπΆοΈ Vegetable Kadai with seasonal veggies, Kashmir chili & garam masala. Slightly spicy, cozy, full of flavor.
πΌπ₯ Aloo Gobhi with cauliflower, turmeric, cumin & coriander. Simple and very satisfying.
πΌπ« Fresh naan baked right in the clay oven because obviously we needed something to scoop everything up with.
The two entrees came with rice as well and was plenty for two people + we were also given a complimentary drink for digestion before the meal, which was a nice way to kick things off. I think it was nannari (a bit like root b**r we were told.)
Full of spice, flavor, and all the comforting food vibes. Great atmosphere as well - super relaxing, clean, friendly staff, and timely water refills which is always niiiice.πΆοΈ

π π₯ If you're spending the day at Hampton Beach, definitely make time for a stop at The Green Room ! You won't regret it. It's just a quick walk from the ocean, so it's pretty hard to resist a stop for something fresh, colorful, and seriously delicious. π΄π€

πΌπΏ OG Toastie on Local Sourdough - smashed avocado, juicy cherry tomatoes, fresh basil + balsamic drizzle. Crispy sourdough, creamy avocado, bright tomatoes and that little hit of balsamic. So damn good. (Ask for no feta to make it vegan.)
πΌπΏ Smoothie Bowl - spinach, banana, peanut butter & almond milk topped with strawberries, bananas, blueberries + coconut. Cold, creamy, fruity, and loaded with all the good stuff. (Ask for no granola to make it vegan.)
πΌπΏ Vegan Egg Sandwich Special - a vegan omelet with bell peppers, red onion + vegan cheese, plus I added avocado because there's really no such thing as too much avocado. π₯

π―ππΌ TWO ways to make a simple VEGAN RANCH WRAP!
If you love a crispy, crunchy, ranchy wrap... you need to try BOTH of these...
β¨ WAY #1: Crispy Tofu Ranch Wraps
Cut a block of extra-firm tofu into triangles, then lightly coat with cornstarch + your favorite seasonings. Give them a quick pan-fry until golden and crispy. π€€
β¨ WAY #2: Easy Vegan Chick'n Ranch Wraps
Grab your favorite frozen vegan chick'n, cook according to the package directions, and you're ready to go! This is the perfect option when you want something quick and easy.
π― For BOTH versions:
β’ Soft flour tortillas
β’ Chopped lettuce π₯¬ or any greens you dig
β’ Plum or cherry tomatoes π
+ cucumbers if u like π₯
β’ Crispy tofu OR vegan chick'n
β’ A generous drizzle of vegan ranch π€
β’ Extra seasoning if you're feeling fancy!
Roll it up, cut it in half, and prepare to wonder why you didn't make two. π
π‘ TOFU TIP: Don't skip the cornstarch! It gives the tofu that lightly crispy coating without needing a heavy breading.

Vegan A.F. in Brattleboro, VT π±
Super chill atmosphere, cozy seating, friendly staff, and just an easy place to hang out and relax together. Everything is 100% plant-based, including the specialty cocktails & seasonal drinks. Was hard to pick as everything sounded good!
We enjoyed:
Starting with the dessert cuz I love it... Chocolate Mousse with vegan whipped cream...rich and silky with that perfect chocolatey sweetness.
Buffalo Cauliflower Wings with wing sauce, blue-ish cheese & carrots. π
Swedish Meatballs with herbed rice, gravy, crispy salted Brussels sprouts & lingonberry jam. Savory, so flavorful, with that rich gravy and sweet-tart jam coming together perfectly. The kind of dish that made us slow down and savor every bite. π΄
I also ended up trying the Smoked Peach Margarita which was basically summer in a glass, sweet peach flavor, tasty lime and a smoky little twist. π
Yummy food, cozy vibes. Can't wait to go back for more. π±β¨

Blueberries + cornbread = one of those unexpected combos that just works.
Soft, lightly sweet, sprinkled with juicy blueberries, and perfect any time of day. ππ½ If you make it, let me know what you think!
π« Easy Vegan Blueberry Cornbread
Ingredients
1 cup cornmeal
1 cup all-purpose flour
1/3 cup sugar
1 tbsp baking powder
1/2 tsp salt
1 cup unsweetened plant milk
1/4 cup neutral oil or melted vegan butter
1 tsp vanilla extract
1 tbsp apple c***r vinegar
1 cup fresh or frozen blueberries
π« Instructions
Preheat oven to 375Β°F & and lightly grease an 8x8 baking dish.
In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
Stir in the plant milk, oil, vanilla, and apple c***r vinegar until just combined. Gently fold in the blueberriezzzz
Pour into the baking dish and bake for 30β35 minutes, or until the top is lightly golden and a toothpick comes out mostly clean.
Let cool for 10β15 minutes before slicin' & sprinkle a few extra blueberries on top before baking for an even prettier loaf.

Some sandwiches just hit different. π±π₯ͺ
Made these vegan TTLA sandwiches with smoky tempeh, crisp romaine, juicy plum tomatoes, creamy avocado, vegan mayo, a crack of black pepper, all piled onto grilled sourdough... and they disappeared fast. π€€
The smoky, creamy, crunchy combo is so good, and it's definitely one of those lunches I'll be making on repeat. π

Vegan lunches don't have to be a whole production. π€·ββοΈπ±
Today's lineup: creamy hummus, toasted pita with herbs & garlic, crunchy cucumbers and carrots for dippin, a quick cucumber & red onion salad + a chickpea salad that deserved an invite. Basically, a bunch of simple things hanging out on one plate... and somehow it's the perfect lunch.
Easy, colorful, delicious. That's the vibe. ππΌ
